Does anyone know of an STC for hanging a rotax 912 or 914 on a 7AC?
Would that even be worth considering?

No, considering you can buy a normal, direct drive , air cooled aircraft engine for the same money. Redrives are not as user friendly as direct drive. A lot of people that flew the Katana's with the 912 Rotax did not like them, however they like the Continental powered much better. Here is my experience with them. They chatter like crazey at idle. The will increase and decrease rpm's on the engine much more with load changes on the prop than a direct. Just one more thing to screw up.

But I say go for it, if it's something your comfortable with. Ron brought up some good points on why not to use one, but i'm sure theres got to be a pro somewhere. Nice thing is the airplane could be listed as EXPERIMENTAL. Then you could turn your airplane into a test bed for all kinds of other mods.
I always thought that 7 cylinder Rotec would be really cool on a champ.
